My Top 10 Favorite Workout Items!!

Ok, so I'm not a truly fancy workout dresser...I definitely have my favorite things I wear or use each day, but I also have my favorite "dreamer" items...these are things that I'll be adding to my collection hopefully sooner rather than later!  SO...I wanted to share some of my favorites with you!!

My iPhone!!  This is how I wake up every morning...I set an alarm and it says GET YOUR BUTT UP!!  It is an appointment that I have set every single morning, and I really hate missing appointments!!

Victoria's Secret has some awesome sports clothing that is very reasonably priced and I think good quality!  Now it's not your Lululemon but it's also 1/2 the price!  :)

I love their crop pants and their Knockout shorts!  Super comfortable and not see thru!!! ;)

VS also has awesome Sports Bras...they are comfy and give good support as I'm doing all the Burpees that Beachbody workouts LOVE!!

My Nike shoes need some replacing...but I love the fun colors they have and they're light, comfortable and offer good support for the cross training programs I do.  It's important to NOT wear a running shoe when you're doing Beachbody programs because there's not enough of the proper support and it's easy to roll your ankle.

And...my Polar F7 Heart Rate monitor...helps me know I'm "in zone" during my workouts!!

Energy and Endurance is Beachbody's pre and during workout drink.  It helps me get through my early morning workouts and gives me the extra boost of energy I need!!

My Beachbody jump mat is one of my favorites.  This I actually got for FREE for earning Success Club one month from Beachbody!!  I use it every morning and couldn't workout without it!!

How to Meal Prep for the 21 Day Fix and 21 Day Fix Extreme

This is a follow up post from a previous post, How to Meal Plan for the 21 Day Fix and 21 Day Fix Extreme.  I wanted to give you the next steps after you PLAN for your week, then, how do you PREP for your week in order to have great success!!

You've created your meal plan for the week.  In creating this, I like to do things that will make it easy for me to prep.  So for example, I'll double up on my lunches so I can make a lot of one thing at one time to save me time!  Many times I'll eat the same thing for lunch because it's easy to prep!

What has given me the GREATEST success! 
Obviously, planning gives me the greatest success for the week.  But my PREP and the time I spend making my meals easy for me to stick to throughout the week is a close tie to the planning!

How I go about my prep for the week depends on how exactly I plan my week of meals!  I really like to have my lunches made for the week so that I KNOW I have that finished and I don't have to put things together when I'm in a rush!

1.  Make a List:  Check your menu for what you don't have and what you need at the store so that you have EVERYTHING you need to prep for your week!

2.  Go Shopping:  I like to buy the bulk of my stuff at Costco because I know I can get my ground turkey, organic chicken, a lot of my veggies and frozen fruits for my Shakeology, eggs, and things I know I use a lot of I purchase there!

3.  Consolidate prep work:  Take a look at your menu and see what you can do all at the same time for prepping.  For example, if you have salad for your lunches, chop all the veggies at one time and set them aside so that you don't have to do veggies all separately for every single salad.

Chop all the veggies for your recipes all at one time, it will save you time!  Then, just set them aside until you need to use them.

4.  Plan your cooking:  I like to look at my meals, see what I can make and package ahead of time or what can be frozen for quick thawing for snacks or lunches.  Whatever I can cook ahead of time over the weekend that will save me time is key for success!

Protein is great to cook in advance.  I like to grill a few chicken breasts, turkey burgers, boil eggs for snacks.  All of this saves me time and assures that I have my meal like I planned!

I even like to make it super easy and cook up a bunch of veggies for my lunch and have it in a "to-go" box so I can grab my lunch and eat it quickly!

5. Bag your Snacks:  Make it easy on yourself.  Cut up your veggies for snacks, measure them out and bag them up so you've got your veggies ready to go!  Same for your fruit or nuts.  The easier you can make it the more chance you have of succeeding!

6.  Package your Meals:  Once I've got all my protein and veggies cooked and chopped then I set out my containers (check out my cool containers I store my food in, I love them!) and start measuring my food and dumping them into my containers to pop into the fridge!  I truly do it assembly line style.  I set out all my lunches and snacks that I need these containers and fill them up, put the lid on and put it in the fridge for later!

Here's a list of things I will prep ahead:
  • Cook ground turkey for meals
  • Grill Chicken
  • Grill turkey burgers
  • Make turkey meatballs or turkey muffins
  • Make egg muffins
  • Boil eggs
  • Cut & bag veggies (bell peppers, tomatoes, broccoli, carrots)
  • Cook veggies (roasted Brussels sprouts, butternut squash, broccoli, asparagus)
  • Bag my walnuts or almonds
  • Prep salads
  • Cook brown rice or quinoa
  • Roast sweet potatoes

Now, depending on what you have planned for your dinners.  I've done various things.  If I have enough time to prep my dinners or even make ahead and freeze, then I will do this on the weekend.  Otherwise, I at least know that I have all my ingredients I need to make my dinner.  I love being able to prep and freeze ahead because as a busy mom, it just saves me so much time!

How to Meal Plan for the 21 Day Fix and 21 Day Fix Extreme

I love to meal plan.  Each weekend I sit down and plan out my food for the week to come.  Sometimes I admit, I'm better at it than other times, but nonetheless, it helps keep me on track during the week and helps me have a successful week that's thought out and planned!

It seems really daunting to my challengers to sit down and plan out their week.  I know when I first started doing this, it took me quite a while to do this!  But trust me, it gets easier as it goes along and you start to really understand how to do this better each week.  Practice makes perfect!

So I really want to make it easy for you so that YOU can succeed at prepping your week and sticking to it!  I've already created lots of cheat sheets for you for the 21 Day Fix, (21 Day Fix Cheat Sheets), but I hope this will help you feel even MORE confident in how to plan your week!

Steps to Planning for 21 Day Fix Weekly Meals

1.  Figure out what calorie range you fall into on the 21 Day Fix or 21 Day Fix Extreme.   You can find the chart at the beginning of the book around pages 4-5.  Complete the calculations and this will then identify your caloric needs and your daily container allotment!

2.  Once you have determined how many containers you get per day of which color, you'll want to make sure you space it out throughout the day evenly so you don't eat too many containers too soon in the day or leave too many to cram them all in at night!  (Refer to the Cheat Sheets for an easy way to divide out the containers throughout the day).

3.  Plan DINNER First!
How to Meal Plan for the 21 Day Fix and 21 Day Fix Extreme, Step by Step Guide, , 21 Day Fix Dinner, www.HealthyFitFocused.com For me, this is the hardest meal to plan.  It's the one where I'm planning, not only for ME but for my family as well!  If you are stumped with what easy recipes to plan for dinner, check out my clean eating recipes.  If you are just starting out, I do suggest starting out SIMPLE.  Something that makes it easy to measure your food groups and not recipes that will have a lot of "combining" of foods together.  Example:  Protein (grilled chicken or turkey burger), Veggie (steamed broccoli or asparagus), Carb (sweet potato, brown rice or quinoa).  Keep it simple to begin!!!


4.  Plan the rest of your snacks and meals!
You want to make sure you are eating 5-6 times per day.  This will keep your blood sugar steady and your metabolism burning more consistently.  In planning the rest of my day, I like to look at when I am most hungry and also what my day looks like.  Convenience of when I'm home vs when I'm out makes a difference in what I plan.  (21 Day Fix Snack Ideas)

What do you LIKE to eat that is on the approved list of foods!  Start there.  Then pick out when you will drink your SHAKEOLOGY and place it in that spot, is it for Breakfast or lunch...or for a snack?  That way you KNOW you are planning in your daily dose of super foods!

Be keeping track of your containers you have used and containers you have yet to use.  It's kind of like a puzzle.  Fitting all your containers in for the day takes time in the beginning but you'll thank yourself in the moment of trying to figure out what to eat!

Make sure that when you are planning out your meals and snacks especially that you combine a carb (yellow), fruit (purple) or veggie (green), with a protein (red) or fat (blue, orange or teaspoon).  

Make sure all your containers have a spot in your day!

I like to color code my meal plan, print it out and stick it on the side of my fridge so I know exactly what I'm having and when to eat it!  Don't forget your WATER!!!

My Favorite 21 Day Fix and 21 Day Fix Extreme Snacks!

The 21 Day Fix and the 21 Day Fix Extreme have the best meal plans and I really love them and believe that they work!!!  Sometimes it is hard to come up with snacks though and half the battle is just deciding what to eat!!!

So, here are some of my favorite snacks for the 21 Day Fix (and Extreme).  I like to pair my fruit or veggies with a protein or fat, so you'll see that I usually never have anything by itself!  With the exception of Shakeology because it is a complete meal (or snack) with balanced protein and carb ratio!

1 green apple - 1 purple
1 tsp almond butter - 1 teaspoon


2 clementines - 1 purple
1 TBSP walnuts - 1 orange


Blueberries (or any berries) - 1 purple
Plain non-fat greek yogurt - 1 red


Shakeology (any flavor) - 1 red
made with water and blended with ice


Carrots or red bell peppers - 1 green
21 Day Fix Snacks, 21 Day Fix Extreme Snacks, Hummus - 1 bule


2 hard boiled eggs - 1 red
Sliced red peppers - 1 green


Strawberries - 1 purple
8 walnut halves - 1 bule or 1 orange

Happy Saturday!  Can you believe that it's already mid-April?
Which only means we are getting that much closer to the "unofficial start" of Summer...Memorial Day!  SIX more weeks until it's time to get out and start really enjoying the warming weather!  As the weather warms, the big puffy sweaters and jackets will have to go away, thus revealing the "winter weight" that is so easy to pack on during those cold months!

Leading with Kindness - Team Call with Carl Daikeler

I just got off of a team call that I was invited to attend, and the host was none other than the CEO of Team Beachbody, Carl Daikeler.  As I was listening to Carl speak I really was so impressed and so honored to be part of a company that holds themselves in such high standards and values.  It really made me proud of what I do as a Beachbody coach and completely solidified WHY I am a coach.

Carl started off the call talking about KINDNESS.  I was trying to figure out exactly where he was going with this.  But as he continued to talk it all made so much sense.  This business, being a Beachbody coach, starts with KINDNESS.  It really does.  It's not about the fitness programs or Shakeology you sell.  It starts with a relationship.  Whether that relationship is brand new or years and years developed.  It starts with a sincere "hello"!

Life, to me, is all about relationships.  We may have some amazing relationships and some that are not-so-good.  But we were created to be in relation with each other!  To invest time and energy into other people's lives, whether we get something in return or not!  That's WHY we were created, for RELATIONSHIP!

As I was listening to the call, Carl emphasized this connection of kindness and relationships and how the two of these are really the building blocks of what we do as a Beachbody Coach.  And it's true!  My goal as a coach, is to be able to create relationships with YOU, to see what struggles you have, what makes you motivated and why you have struggled in the past or how you have succeeded in the past.  Then, helping you go from there into something that can help you change your life around.  Something that will help you live a healthier life.  That doesn't mean you have to be at your goal weight, or have 6-pack abs...it means being able to create an opportunity for YOU to have a safe place where you can be accepted for who you are...where you are in your life and what goals you have for yourself.  
As a coach, I want to provide a place for you to get support to be a healthier and happier version of yourself.  This kindness isn't limited to me being kind to YOU.  It reaches so much further where YOU have to be KIND to YOU!!  When you can become the healthier version of yourself and are KIND to yourself, you have reached an amazing place in your journey.  That doesn't mean you are perfect and at your health and fitness goal, but it means you are getting closer...closer than you were yesterday and that's what matters!

It was amazing to be able to hear the excitement and passion in Carl's voice as he talked about the coaches we currently have in this organization...over 280,000 coaches who are passionate about changing lives.  Passionate to help end the trend of obesity.  Passionate about spreading KINDNESS knowing that ONE person can make a difference.  Carl's goal doesn't stop here...or at 300K coaches, or 1/2 a million or 1 million coaches.  There are far too many overweight, obese, unhealthy people in this country, Canada, and the world.  There are people who NEED the KINDNESS that we as coaches desire to spread.  To many it is a matter of life and death because they are so severely obese and overweight.  We are here to HELP YOU!  And you are in a save place that you won't be judged but accepted!!

Beef and Butternut Squash Stew - 21 Day Fix Extreme Recipe

What's better than beef and butternut squash??  Seriously, anything with butternut squash I absolutely LOVE!!  I was thrilled to know that Autumn categorized butternut squash as a GREEN container (veggies) and not a carb!!  So, when I saw this in the meal plan, I knew I had to give it a try!!

Let me tell you...this is DELICIOUS, filling and satisfying!!!

Beef and Butternut Squash Stew - 21 Day Fix Extreme Recipe
Beef and Butternut Squash Stew
(Makes 6 servings, about 1 1/4 cups each)


  • 1 tsp olive oil
  • 1 1/2 lbs raw lean beef stew meat, boneless (cut into 2-inch cubes)
  • 1 medium onion, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 4 cloves garlic, crushed
  • 2 medium tomatoes, chopped
  • 1 cup low-sodium organic beef broth
  • 1 bay leaf
  • 1 tsp sea salt or Himalayan salt
  • 1 tsp ground black pepper
  • 2 cups cubed butternut squash
  • 1/4 cup chopped fresh flat leaf parsley


  1. Heat oil in a large saucepan over medium-high heat.
  2. Add beef; cook, stirring frequently, for 4 to 5 minutes, or until beef is brown.
  3. Add onion and bell peppers; cook, stirring frequently, for 4 to 5 minutes, or until onion is translucent.
  4. Add garlic; cook, stirring frequently, for 1 minute.
  5. Add tomatoes, broth, bay leaf, salt and pepper.  Bring to boil.  Reduce Heat to medium-low; cook, covered for 40 minutes.
  6. Add squash; cook, stirring occasionally, for 8 to 12 minutes, or until sauce has thickened and beef is fork-tender.
  7. Remove bay leaf; serve topped with parsley.

I made a double batch of this...I served it
for dinner with my family and then froze the extra in individual servings for later dinners!

When I get in the car, I like it one of two ways: totally quiet or I like to listen to personal development. I know, to some of you that may seem strange.  I honestly don't like the "noise" of having music blaring on a regular basis.  Sometimes my kids will turn it on but most of the time, I just want it quiet.  If I am by myself, then I am definitely listening to some personal development!

Well, that's what I did today on my drive to some appointments.  Beachbody offers amazing training calls every week led by top coaches in the organization.  Every Monday morning, I'm listening to the call by one of Beachbody's top coaches and learning how I can better myself, my challengers and my coaches and team!  They've got these all recorded and on a Podcast so I often will go back and listen to these calls in the car!

So, I'm going to get very real with you here, I hope you realize that I am just as human as you are and I have very real fears, struggles and setbacks all the same!  I get down on myself and don't always fill my head with the positive affirmations I know I should.  Just like anyone else, I get off track with my nutrition and fitness and KNOW what I should be doing, but don't do it!  So, in short...I'm human!!

It's hard to even put things in words, because being vulnerable is just not always natural and easy...

One of the major reasons I became a Beachbody coach back 20 months ago was so that I could help hold myself accountable to my health and fitness goals!  I have struggled at many times in my adult years with the yo-yoing of diets (as I'm sure so many women can relate to) and I really just wanted to end that once and for all!  Let's face it.  I know how to do it all.  I know how to eat healthy, I know how to exercise and workout, I know how to encourage others and help them reach the success they are working for.  But, over the last month, I was just not in a good state of mind with myself in order to do that for ME.  I had been a little lax with my nutrition for a couple months and then got to the point last month where the "I don't care" saying came into my head (which truly I do care...but my actions weren't showing).  This went for my nutrition as well as my business.

Things I struggled with:
  • Nutrition- even though a lot of what I was eating was healthy, I had too big of portions and I would add things in like tortilla chips and cheese and snacky bars that are not in line with the 21 Day Fix.
  • Positive Self Talk - I found myself saying "I can't" WAY too much.
  • Emotional highs and lows - hey...I'm a woman and we can be known for emotional highs and lows, but most of the time I can hold myself pretty even keeled.  This month I found myself more in the emotional lows.
  • Support -  I failed some of my challengers and coaches because I was not as involved as I usually am and like to be to help them succeed!
  • Business - I lacked the discipline to daily do the things I need in order to keep my business moving the direction I desire to reach my goals!
  • Personal Development - I stopped listening to the podcasts and audiobooks, I stopped reading things that would set my mind in a positive direction.
Do you know how negative things can work in your head?  They keep grating at you an a negative thought repeated over and over becomes ingrained in your brain.  I don't know about you, but I don't want negativity to be ingrained in my brain!

Well, this is a new month...a fresh start to clean the slate from the past!  I got on the phone with one of my mentor's, Melanie Mitro, who I feel so blessed that she's a part of my life and she was able to help me change the course of my actions over the last month and get my mind filled with a goal and positive mindset to move forward into April!

So...how do you get out of that RUT of negativity??

Here's what I did:
  1. Be honest with yourself
  2. Share with someone you trust
  3. Own up to your shortcomings
  4. Take Action and make a plan!
So let's break that down and I'll tell you what I did to get out of my rut and back on track.   First, so much of my mental negativity stemmed from my poor nutrition.  It really effects me (and maybe you) so much more that we all realize it!  Yes, my pants were fitting tighter and I didn't like that and I knew I wasn't practicing what I preached 100% (or even 80%).

In order to kind of get a handle back on my nutrition and gain control that way, I decided to do the 3 Day Refresh...and stick to it 100%.  I followed it to a T and didn't cheat.  (Ok...well, honesty here.  The only thing I did not do was stop my morning coffee, I had been struggling real bad with headaches and going off the coffee I was not going to add anymore headaches to my day!  But I cut the coconut oil down to 1/4 tsp in my coffee.)  

This 3 Day Refresh really got my mindset refocused and reminded me I CAN follow my plan without feeling the need to pick at everything.  I did that successfully for 3 days and had great results.  I lost 3 lbs and 4 inches and gained control and a mindset to refocus again on my nutrition.

From there I was able to go straight into the 21 Day Fix Extreme Countdown to Competition meal plan and stick to that.  Feeling great and confident and successful for following my plan!

I've set goals for my business, my fitness/nutrition, my coaches and challengers and most importantly I have a mindset that I AM A WINNER!!!  That no matter what I set my mind to, I can achieve!!

So...there it is...it's all out there!  I'm human, I struggle with things just like you do.  And yes, as a coach, I'm not perfect.  I do fall off the wagon sometimes with my goals, but it's important to get back up and moving in the right direction.

The Perfect Hard Boiled Egg

I always thought I "knew" how to make a hard boiled egg...I mean, how hard can it really be?  Well, I've tried many different ways, all of which have resulted in either under cooked or over cooked boiled eggs. Honestly, the worst is over cooked, I hate that brownish-green color around the yoke...then you eat the yoke and almost choke on it because it's so dry!  The under cooked eggs I don't mind as much, but still they are not ideal!

Boiled eggs are such a great snack, it packs a good amount of protein and great for on the go!  These are a staple for my kids and ME especially with the 21 Day Fix nutrition plan!!

So, just in time for Easter, here you go!

Boiled Eggs

12 eggs at room temperature

1. Get a large saucepan and place the eggs inside.  Cover the eggs with cold water, at least covering by an inch.  Bring the water to a boil over medium to medium high heat.  Once water has reached a boil, turn off the heat, cover and remove from heat.  Let them sit covered for 10-12 minutes.

2.  Drain the hot water and immediately run under cold water to stop the cooking.  You can serve immediately or save in the fridge for later!
