Healthy Banana Pancakes

Guilty as charged...I love pancakes!  It's been a tradition with the kids for years that we make pancakes on the weekends.  We don't like just any pancakes, we make ours from scratch every weekend usually with bananas mixed throughout.  While the ones my family make aren't unhealthy, there's more flour in it than I prefer for myself.  So, along the other day I went searching for another recipe I could make while my family had their pancakes on Saturdays.  I actually now have a couple recipes I can reach for now.  My absolute favorite is the Oat 'N Cashew pancakes, oh these are delicious!  But this go-around I was out of the ingredients for these! it is, another healthy version of pancakes!

It's super easy...

1 banana mashed
2 eggs (I might try this with one egg next time)
touch of cinnamon

Mash banana and mix the eggs and cinnamon together.  Cook on non-stick skillet.  Serve with blueberries on top!  Enjoy!!

I am SO excited I just can't take it!!  I've always heard about the Beachbody Challenge and seen the daily winners on, but never had it hit home that ANYBODY could win $500 by entering their results to Beachbody!

Baked Apple Chips

I am constantly in the search for healthy snacks for my kids.  I always want to duplicate things that I see in the stores that cost a lot of money and are still filled with chemicals I'm not crazy about my kids having!!  We always see the dried fruit chips in Costco that are actually pretty healthy but seriously, I think they are so overpriced.  So...I found this awesome recipe from Sally's Baking Addiction!

I am going for crispy apple chips.  I am not a fan of the mushy and chewy ones.  First what I did was slice the apples very thin.  I just used a knife but if you have a mandolin slicer that would be ideal!  A corer would be nice too...If I start making these a bunch, I'll invest at least in a corer for sure!

Slice them thin and then put them on a baking sheet.  I recommend using parchment paper or a Silpat for easy cleaning and so they don't stick!

I sprinkled these with cinnamon only.  While I wanted to drench it in cinnamon sugar, I really wanted to do it completely with no added sugar!!  So that's what I did!!

Baked Apple Chips
3-4 apples
  • Slice very thin
  • Place in single layer on baking sheet lined with parchment paper
  • Dust with cinnamon
  • Bake at 200 F degrees for 2.5 hours
  • Flip one time during the 2.5 hours
  • After the time is finished.  Turn off oven and keep apples inside for 1 more hour.  (making them crisp up better).
(To make them crispy you'll want to bake them at a low temperature...200F degrees for 2.5 hours.  If you still want them more crispy you can continue to bake up to 3 hours.)

I know I'll be making these larger quantities this time!!  This will make a great snack for back to school snack ideas and lunches!!!

Southwestern Veggie Taco

This is one of my favorite recipes I took away from the Ultimate Reset!  I make it all the time, and usually have it every Tuesday when my family is having Taco Tuesday at home!  It's easy, I leave out the ground turkey from mine and make a few adjustments with the recipe and voila...delicious, healthy, and vegan meal!!

(makes 1 serving)
1/4 medium avocado, mashed
2 Tbsp. fresh pico de gallo (salsa)
1-1/4 cup Black Beans and Rice** (see below)
1/4 cup cooked corn kernels
1 (6-inch) tortilla

Combine mashed avocado and fresh salsa in small bowl; mix well.  Set aside.  Place Black Beans and Rice and corn on one half of tortilla; fold.  Serve with avocado and salsa mixture.

**Black Beans and Rice -(The Ultimate Reset)
(makes 1 serving)

1/2 cup canned low-sodium black beans, drained
Southwestern Veggie Taco, vegan meal, clean eating, Ultimate Reset Recipe
1/4 tsp. extra-virgin olive oil
1 dash ground chili powder
1 pinch ground cumin
1/4 tsp. ground coriander
1 tsp. Bragg Liquid Aminos
Himalayan salt (to taste; optional)
3/4 cup cooked brown rice, hot

Combine beans, oil, chili powder, cumin, coriander, Bragg Liquid Aminos, and salt in a medium saucepan; mix well.  Heat mixture over medium heat for 1 to 2 minutes, or until heated through.  Remove from heat.  Gently fold rice into bean mixture.  Serve immediately.

Week 4 Piyo Update

Well, week 4 came and went.  I'll be honest, it was completely crazy around my house because we moved last week.  So much of my week was spent packing, moving and unpacking.  I was able to get my workouts in for Sunday, Monday and Tuesday.  To say that last week was crazy would be an understatement... Moving, Cleaning, Packing, Birthday, VBS, Swim Team Championship, Swim Team Banquet...It was nuts!  But, it only lasted for a bit...Wednesday was spent literally all day deep cleaning my house and Thursday thru Sunday all the last bit of moving and the joys that brings! LOL

So my first 3 days of the week went great!  My favorite was Tuesday with the Buns workout...I love that workout.  Needless to say, last week was a bit of a wash, for workout and nutrition.  Due to not having a fridge or any food at the house, we had to eat out a lot.  I made healthy choices, but it sure was wonderful to get back to healthy cooking!!

Because of the crazy week 4 I had, I've decided to repeat week 4 of Piyo and do it right!  So I started on Monday morning and am getting back into that and eating properly!!

There will always be times in our lives when life throws things at us and we have to be flexible to change our normal routine up a little bit.  That's just LIFE, and that's's what we do after that that makes the biggest difference.  Do you continue to let the curve ball that life threw at you get you off track or do you put your big girl panties on and move on back into your routine that makes you successful?  It's your choice!
