Turkey Meatloaf Muffins

Turkey Meatloaf Muffins




I am always in search for a great snack or easy meal.  I've always loved meatloaf but with all the added sauce it makes it difficult to eat it as a quick snack on-the-go.  These muffins come from Jamie Eason's 12 week Livefit program, they looked great so I decided to try them!  It gives me a perfect blend of complex carbohydrates and protein for a complete snack.  Often I will make a double batch and freeze them to grab for a quick snack or lunch.    I'll usually take 2 for a snack with a handful of veggies or for lunch I'll pair it with a big salad.  They are easy to make and easy to take and go!  The best part is that the kids love them too!

Be creative with these.  I like to add zucchini or shredded carrots in mine, in addition to what the original recipe calls for.  


Ingredients 
  • 2 lbs ground turkey or chicken
  • 3 egg whites
  • 1 cup quick cooking oats
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • 2 tsp dried yellow mustard
  • 2 tsp black pepper
  • 1 tsp salt
  • 2 tbsp garlic powder (or 2-3 cloves of fresh garlic)
  • 1 small onion finely chopped
  • 1/2 - 1 cup finely chopped spinach


Additional add-ins (optional)
  • 1 Zucchini shredded
  • 1-2 carrots shredded
  • 1/4 cup shredded Parmesan Cheese (adds an Italian taste)


Directions:
  • Preheat oven to 375 degrees
  • Spray muffin pan with olive oil
  • Mix all your ingredients together in one large bowl
  • Roll the mixture into balls and place in muffin tin.  Muffins should be about the size of racquet balls.
  • Bake for 40 minutes
  • Makes 12 muffins


Serving size 2 muffins for women and 4 for men.

Fat: 2 g
Carbs: 4 g
Protein: 11 g

  1. Love these. (I did use the chipotle pepper spice, but it was plenty hot with one tsp.) I made a double batch, but changed up the seasonings so that one was spicy/Mexican and the other was Italian. For Italian, just omit the cumin and chipotle pepper spice and substitute 1 TBS Italian seasoning and 1/3 cup grated parmesan cheese. These will be 90 calories each.

    1. These are regular size muffin pans...but I measure them to be about a 1/2 cup per muffin!!

  4. I made these up this weekend and they are so good!! The serving size seems off to me. I just got my containers in the mail and the red container seems to be about 1/2 cup. If each muffin is 1/2 cup serving shouldn't it be 1 muffin = 1 red? I would love to have 2 but it seems like a big portion.

    1. Amelia...ya know...I appreciate you bringing this to my attention. I think you're more right on!! But yes, it does absolutely depend on the size of your muffins. I think that's what it boils down to! Plus, I do take into account how much of the veggies I add. If I add more than normal to a batch then I may make them a little larger than 1/2 cup...or if I make them 1/4 cup each with lots of veggies, then I may add more than 1/4 per muffin. SHOOT...I'm with ya...wish it were a solid 2 muffins!! HA!!

    2. Thanks Julie! I just started the 21day fix and want to be hardcore right from the start. I know the moment I give myself wiggle room the more things I become lenient and I want to maximize my results! :) This recipe fits right into foods I normally eat and it is so easy to prep ahead of time for a busy mom!

    1. It kind of depends on how much veggies you add. If it's not a lot then I wouldn't add a green container. I may only suggest 1/2 a green if any. But honestly I don't use that as a green at all.

    1. You could probably count it as 1/2 a green if you wanted to...but it really doesn't equal that much. I typically don't count it as a green b/c there's just not that much in there.   9. Do you count the oats? Maybe half a yellow? I'm new to this too. I do have a coach...just thought this recipe sounded yummy!

    1. Yea, you could count 1/2 a yellow, I don't know if it's even THAT much...but if you want to be on the safe side go with 1/2 yellow! :)

  10. Hi, thank you for this great blog. I am going to start in a couple of days, when I get the shopping done. On these muffins, should we count 1 red and 1/2 yellow per 2 muffins? Also, can we freeze these? Thank you.

    1. Yes, that's typically what I'll do 1 red and 1/2 yellow per 2 muffins. I ALWAYS freeze them! Works great! Do you have a coach that you're plugged in with?? If not, please let me know and I would love to give you extra support! :)

  12. I'm making my second batch of these right now, the last batch didn't even make it to the freezer as I had intended they were eaten so fast. These are really good with mustard (which is a free food :D), thought I would mention it incase anyone else wanted a little extra flavour.
