21 Day Fix Recipe - Chicken Tinga

I love slow cooker recipes and I was looking for some new recipes I could share with you for the 21 Day Fix!!  So here ya go!

Chicken Tinga, 21 Day Fix Recipe Approved
2 lbs chicken breast
1/2 large onion, minced
4 cloves garlic, minced
1.5 cups diced tomatoes with green chiles (Rotel)
3 tbsp chipotle salsa or blended chipotles
1/2 tsp salt

Instructions
Combine everything in slow cooker.  Stir together.

Cook on high for 3-4 hours.  Remove the chicken from the cooking liquid and shred.  Stir in some of the tomatoes and juices from cooking after you shred it for added flavor. 

Can serve over brown rice or in tortillas.

What's Going on in October?

The 21 Day Fix is an amazing fitness and nutrition program.  It is 7 days a week, 30 minute workouts and perfect for the fitness beginner!  The meal plan is easy to follow and lays it out so beautifully and simply for you.  You are given color coded containers that you fill to measure your food and you have an allotted amount of containers per day based on your weight and calorie needs!

It takes 21 Days to form a Habit!
The 21 Day Fix is literally laid out for you to offer you amazing success... BUT, for any of you who have never done meal planning, are new to eating healthy and have decided to make the best decision of your life and make a change for your health, this, while simple, can seem very overwhelming and confusing!!  I get it!!!

I've had so many requests from my challengers and from YOU, my readers about planning and organizing your meals, etc.  So...you asked...and I'll answer!!  I'm hoping to make this process a little more simple for you.  This shouldn't be difficult for you to figure out because when it's difficult, it gets us discouraged and makes it harder to stick with it.  I want to prevent that from happening.  I want YOU to be successful!!  Let's face it, when you can get your nutrition in line, thing start changing on your body!!!

So what I've done is taken each of the calorie groupings and separated the colored food groups into your 3 meals and 2 snacks throughout the day, so all you have to do is choose what you want to eat!  Obviously, you can change these around as you see fit, but, this will give you a start and an idea of how to organize your day!  Plug in the foods per group and voila  you've got yourself a meal plan!!!

What is P90?

12 Tips: A Mental Approach to Eating Healthy

Have you stopped and looked around lately?  It seems like everyone is trying to eat healthy, lose weight, eat organic and so on.  So you may be changing your habits and buying all the healthy stuff and think you're doing ok and eating the way you should to lose weight, but have you changed your MENTAL approach to your health and eating right?  You would be amazed the power your mind has on how your body reacts!!  These 12 tips may help you change your thinking and help you be the healthy eater you desire to be!

1.  Set Goals:
Why have you decided to change your diet and start eating healthy?  Having a clear and realistic goal is key to your success.  Write a list of what you hope to change in your diet, things you want to incorporate, things you'd like to quit eating.  Also, make a list of what you hope to achieve physically.   Are you looking to lose weight, do you want to tone up or get ripped?  Set it on a time line.  These things don't happen overnight.  Give yourself  a time period of when you want to achieve certain milestones.  Write them on sticky notes and place them where you see them every day, on your computer, the fridge, your bathroom mirror, on your phone!  Share your goals with a friend.  When you share your goals, someone is there right beside you to cheer you on and hold you accountable to your goals!  As you achieve your goals, check them off.  This gives you a sense of accomplishment and adds excitement leading into your next goal!

You have decided to change your eating habits for a reason...to get healthier or lose weight, so make sure your diet is working WITH you and not AGAINST you.  You must have realistic expectations in order to be able to continue with your goals and succeed!  That means, your plan needs to work for you and fit your situation.  Make sure your are planning to succeed.  If you make a plan that doesn't fit your budget, you won't be able to continue long term and thus you will have to withdrawal from the diet you set for yourself.  If you plan to do lots of difficult cooking but you hate to cook, you'll get burned out and not want to continue or reach for a quick unhealthy fast food meal.  So be realistic in your goals, know your limits, your time and budget constraints.  You can get very creative on a low budget yet still be healthy and successful in the process.  This takes work and planning, but you can do it!

3. Be proactive
Don't let your hunger sneak up on you...you  know you eat 3 meals a day and have 2-3 snack throughout the day too!  So why not be proactive and plan ahead for those times.  Make a list of healthy snack choices that you enjoy and can take to work, have in the car, take with you for a day out.  Never leave your house without a healthy snack to go.  You can create an entire meal plan for your week, detailed with every time you'll eat.  This will keep you on track and prevent you from saying "I don't know what to eat or what we are having for dinner".  This is your accountability partner every moment of the day!  If you have this planned and prepared ahead of time you won't find yourself in the office in front of the box of doughnuts wondering if it fits into your new meal plan...you'll know that you should pass them by because it's not on your plan!  Plan accordingly to your schedule...you know what you have going on most of the time, choose your path of success!  When you fail to plan, you plan to fail!!

4. Consistency is key
Most people respond well to consistency.  When you have a plan, it's much easier to stick to.  Get a plan and stay committed to that.  You typically know what a normal day looks like so try and eat around the same time each day.  Stay consistent with your calorie intake and portion sizes.  Your body responds to the consistency you give it as well, it will recognize your pattern and your metabolism burning levels will stay high.  You will start to feel better as you fuel your body and get into a healthy routine.  The time you choose to spend on planning for your day or week will set you up for great success as you choose a healthier lifestyle.

Well, it just wouldn't be life if we didn't have to be flexible from time to time because things happen
and unexpected circumstances get in our planned way!  So, what do you do?  Do you choose to throw all caution to the wind and go back in your old ways or do you choose to be flexible and go with the flow and stick to your plan as much as you can?  This is why being proactive is so important, because you've already planned ahead and packed some snacks in your car or purse and you're ready for anything to happen.  For example, keeping a bag of almonds, protein bars (my favorite are Lara Bars), shakes or fruit handy can be a lifesaver for you in a pinch!



6.  Don't be so hard on yourself
Nobody is perfect all the time.  There will be times where you mess up for a few meals, you fall back into your old habits or just have a couple of bad days.  Get over it!!  Pick yourself back up and remember your GOALS!  Why did you start this...what do you want to acco
mplish?  It's not the end of the world if you have some bad days...it's how you respond to those days that make all the difference in the world!  Being healthy and eating healthy is a lifestyle, it's not a diet.  You are changing your ways for a lifetime not just for a period of time!  It's ok to mess up, you just have to remind yourself this is marathon, not a sprint...YOU CAN DO IT!!

7.  Stick with your plan
It takes time to develop healthy habits.  It doesn't happen overnight.  A habit takes 21 days to make or break old ones.  So give it about a month of consistent healthy eating and you'll have developed a habit.  You'll be able to look back and see what once was difficult is now second nature!  So give it time, this is something you'll do day in and day out...it's part of your life now!

8.  Have Fun
12 Tips: A Mental Approach to Eating Healthy, Have fun, www.HealthyFitFocused.com Being healthy and eating right is a commitment.  It takes time, dedication and sacrifice.  You'll have bumps in the road along the way, but don't stress about that!  Remember that your positive outlook on life can overturn any negative situation you have going on...it's a choice to see life in a positive way!  It makes life more fun!  Don't do this on your own.  Being healthy and active is so much more fun with friends and family alongside you!  Find fun ways to get yourself motivated.  Set challenges with friends.  Teach your kids healthy cooking ideas.  Sign up for a charity race and get your family involved!  Go play at the park with your kids!  You are becoming more healthy so that you can live life fuller and be healthy to have fun!!  So go out there and have FUN!!

9.  Give yourself praise
You are not a dog so don't reward yourself with treats!  You are changing your eating habits, and that is daunting for anyone.  Remember how long you've had your current habits for...you didn't create these habits overnight, nor will the new habits stick in that amount of time either.  Remember to celebrate the small victories in your life!  Congratulate yourself with the healthy habits you are forming, you deserve praise.  Speak positivity into your mind everyday!  If you want to reward yourself with something, make it a non-food item.  Example, when you reach a new milestone, treat yourself to a new pair of jeans or a new bathing suit!  You deserve praise...and you are making choices that will last so much longer that a "special treat".

People always start with the best of intentions and a will to try...and they want to do everything all at once!  That is an open door to being overwhelmed and it's easy to quit before you've gotten started!  Consistent and small changes over time can make a huge difference.  Work on one thing at a time, when you've mastered that, go on to the next thing.  Keep building on your progress and then you'll be able to incorporate many things at once.  But take it slow!  You are making a healthy and happy lifestyle change, there's no need to be stressed out in the process!




11.  Focus on the journey and not the destination
It is never easy to live a healthy lifestyle.  You are on a journey of creating greater health for you and your family.  There will be ups and downs along the road.  You must enjoy the journey to the destination because the journey is what makes you stronger and keeps you changing.  Once we hit our destination we immediately look to the next mountain top and we either want more or worst case we think that we've accomplished all we need to and we relax on all the things that got us there in the first place.  Take pride in small victories.

12.  Measure success and set new goals
Making successful changes in your health means measuring your progress toward your goals and recognizing your accomplishments.  Each short-term goal you meet you can plan for another goal with greater confidence.  You must constantly look at your goals both short term and long term and be able to break them down into doable and reachable goals.  It's ok to adjust and modify your goals.  It's an ever-changing process.  But, don't stop setting new goals and striving to reach them!

Pumpkin Spice Latte (a healthier alternative to Starbucks PSL)

Fall is in the air (ok, that's just me dreaming as it is going to be over 100 degrees here in SoCal this weekend...).  Pumpkin everything is starting to come out everywhere!  If you're like me, fall is my favorite time of the year (and also my least favorite!).  I grew up in Kansas and lived a few years in Northern Virginia and love, love, love Fall.  Like, really love Fall!  Ever since I moved to Southern California, well, that is the "season" we really just don't have.  We get it for maybe a couple weeks in late November, if we're lucky...but, there's really nothing like a true fall with the changing of the leaves and the cool crisp in the air!

So, when pumpkin "everything" comes out this time of year, it's a love/hate relationship.  But deep down I absolutely love it still because I just LOVE pumpkin anything!!

Well, I used to get really excited about Starbucks coming out with their Pumpkin Spice Lattes.  Over the last few years as I started being more concerned about what I was eating and drinking I would only get them maybe one or two times a year.  HOWEVER...now that I'm being even more conscious about not only the calories in but also the other ingredients that are in my foods, I've decided I will NEVER be having a Starbucks PSL again!

The 3 Types of Beachbody Coaches

I am so excited to be growing my Beachbody team, I think of it as a FAMILY!!  I'm so passionate about Beachbody and being able to help others reach their full potential, to be able to speak a belief into others that empower them as individuals.  I know that this opportunity has been such a blessing to me and my family and to those I have the privilege of coaching with.  We have an amazing team of highly successful coaches and leaders who are ready and willing to share their knowledge and tips and advice!  You will be able to do this at YOUR own pace!  You walk - I walk.  You run - I run.  You sprint - I sprint.  The choice is yours!

We are a team...we do this together, share ideas, help each other, encourage and motivate one another, there's no reason to re-invent the wheel!

Remember, that everyone starts at a different place, and a different reason why they want to be a coach.  Not every has the same goals or dreams...and that's ok!  Some people want to jump in and make this a full time business right away, others don't want it to be a business at all, they just want a discount on the amazing products!  There is nothing wrong with singing up to be a DISCOUNT COACH!!

My goal as a coach is to focus on what YOU want...and what OTHERS want!  It's not about me it's about YOU!

I strive to know your intentions and desires when you sign up to coach.  I want to push you if you want pushed...but if you don't want pushed, I want to know that so I can give you as much or as little support as YOU WANT!

Basically, there are 3 types of Beachbody Coaches who decide to join!
1. "Preferred Customers" - Those who want the amazing discount.
2. "Wait & See" - They first want to work on their transformation and then share their results with others OR they want to just do this as a hobby and share the products with their friends and family.
3.  "Full Speed Ahead" - They are ready to start building a business and ready to change lives!

Obviously, the goals and needs of these three types of coaches can change over time.  You are not locked into one type ever!  I'm excited to work with you at whatever pace you are ready to go!

Taco Soup

Here we are again...wishing that fall would be cool enough for me to dig into my soup recipes.  Well, I make 'em anyway!!  This is one of our favorites in our family.  An easy one to just throw together, or an easy one if you have leftovers of taco fixings too!  We typically have Taco Tuesday every week, and on the rare occasion that I have leftovers, I can make a 2nd meal from it! (Taco leftovers doesn't happen much!  LOL).  Remember, my soups are all "about" in measurements...I love soups because most of mine contain whatever I have in the kitchen!

Ingredients

  • 1 lb ground turkey, browned
  • 1 cup frozen corn
  • 1 can black bean, drained
  • 1 can pinto beans, drained
  • 1 jar black olives, drained
  • Water with chicken bullion (it depends on how much broth you want)
  • (sometimes I throw some rice in here too)
  • Taco seasoning (about 1/4 cup, or to taste!)


Combine all the ingredients in a crock pot and cook on high for 4 hours or low for 6-8 hours.
Top with low-fat cheese, avocado, or greek yogurt (in place of sour cream).

Ground Turkey and Rice Soup

So I really don't know what to call this soup.  I was in the mood for something really easy after a long morning of cleaning the house...all my chicken was frozen and I had a pack of ground turkey to use.  So, I put my thinking cap on and started cooking and throwing ingredients into the crock pot (my best friend once school starts!).  And the outcome was absolutely delicious and my family LOVED it!

So for those of you who have never used a crock pot or don't have one...RUN, don't walk to go get one today!  This is seriously my favorite appliance in my kitchen (ok...VitaMix is right on up there too).  I need to do an entire series on crock pot meals because I love them so much!  I'm on my 3rd one!!

Ok, back to the soup!  Here's the ingredients below...everything is an "about" measurement.  When I'm making soups, I really don't measure things, I just throw them in!  You can't "mess up" a soup in my opinion (ok, I'm sure you can...but not the ones that I make...it's a free-for-all of whatever I have in the pantry and freezer!!).  So feel free to adapt and change as you see fit!

Ground Turkey and Rice Soup

Ingredients

  • 1 pound of ground turkey (browned and drained)
  • chicken stock (I use "Better than Bouillon" about a tablespoon and then fill up my crockpot with water and taste as I go)  
  • 1/2 onion, chopped - browned in skillet
  • 2-3 carrots, chopped small and browned with onion
  • 1 to 1-1/2 cups frozen corn
  • 1/2 to 3/4 cup of brown rice (no need to be cooked it will cook in crock pot, as it cooks a long time this gives the soup a little "thicker" consistency to it!)
  • 1/2 tsp salt (or to taste)
  • 1 tsp pepper
  • 1 tsp Oregano (or more to taste)
  • 1 tsp Thyme (or more to taste)
Put everything into the crock pot and cook on low for 4-6 hours or more.  Top with cheese!  Enjoy!

Why I am a Beachbody Coach and how YOU can be too!

It was a little over a year ago when I decided to become a Beachbody coach.  Honestly, I didn't know a whole lot about it.  I knew I wanted to be more consistent with my health and fitness and be held accountable for sticking to those goals.  Beyond that, I really didn't know anything else!  I kind of jumped in blindly...but not alone!

Like I said, I was drawn to Beachbody primarily for accountability for myself and I saw great value in being able to help others stay accountable to reaching their health and fitness goals.  I had always had a love for health and fitness before, and this was an exciting way to develop that more.

I knew I made the right choice when I experienced the rush of adrenaline seeing my challengers reach new health goals (weight loss, strength, staying committed to their goal).  It became addicting to know that I could have an impact on someone else's life that could actually change the course of the entire health of their family!

Now that I've been coaching for a year and been able to help many people get closer to their goals, my dream has gotten even bigger.  I am amazed by this opportunity to share the gift of health with others, but I've now gone a step further.  There are only a limited amount of people I can reach and help, now, I am looking for people who want to come alongside me and coach with me!  To help change the future of our families and friends and those around us by giving them the gift of health!

I know Beachbody has been a huge health and financial blessing in our family.  Not to mention it is extremely rewarding!  With Beachbody, I hope to be able to pay down some credit card bills and the dreaded student loans!
