Balsamic Chicken (Slow Cooker)

This is a delicious and super easy crock pot meal!  I got this one from my friend Lisa Decker and it's a winner!!
  • 4-6 boneless skinless chicken breast
  • 1 medium onion thinly sliced
  • 3 tsp minced garlic
  • 1/2 cup balsamic vinegar
  • 1 tbsp olive oil
  • 1 tsp each: dried oregano, basil, and rosemary
  • 1/2 tsp dried thyme
  • 3/4 cup low sodium chicken broth
  • Salt & pepper to taste

Preparation
1.  Season chicken with salt and pepper.
2.  Add olive oil to bottom of crock pot and then chicken.
3.  Top chicken with sliced onion and dried herbs and garlic cloves.
4.  Pour vinegar (if you desire additional "juice" add 1/4-1/2 cup water or chicken broth).
5.  Cook on high for 4 hours or low for 6-7 hours

I like to serve this over brown rice or quinoa.

This is an easy meal to make extra for lunches the coming week!!

PiYo Week 3 Update and Meal Plan

PiYo Week 3 is in the bag!  And...it's official.  I LOVE PIYO!!

This week I think was a turning point for me in my PiYo journey.  I not only have gotten stronger this week with the moves but I've grown more addicted to the way PiYo makes me feel and the way it's shaping my muscles.  My wrists have gotten stronger and more flexible, which if you have done any bit of PiYo you know that you are up in plank or some sort of plank a lot during PiYo.  Chalene always says that if your wrists hurt then they will get more flexible and strengthen during the program...it's true!!

In week 3 there are 2 new workouts that are introduced...and I really liked both of them!  

Buns:  Holy cow...I was so sore after this workout, it was tough but I KNOW it was working my legs and buns and it felt so good being sore like that!  So, Buns is definitely one of my favorite workouts!

Strength Intervals is the other new one this week...I really liked this one too.  This is more cardio than any of the workouts and you have your shoes on!  I was SO sweaty after this workout and another great one!

So I told you that I would keep you updated on my Sunday workouts...This past Sunday I was actually looking forward to working out, which usually I want my Sunday to be a rest day, but, that's why I said I turned a corner this week.  On Friday, my rest day, I REALLY needed a rest day.  So Sunday came around and it was a great workout!!  So, this is proof that if you stick to the program, it will change you!

This is what I'm eating this week!!  Now, things may change as we are getting ready for a move and trying to use up what we have in the fridge.

Clean Eating 7 Day Challenge

Well for the last year I've been "eating clean".  No, it's not making sure my food is washed and not dirty (although I do that!).  But it's making sure that I'm eating fresh, non-processed foods.  It has completely changed the way I feel when I'm fueling my body with good food and not crap!

European Dream Vacation!

Well, this is totally a personal post today. I've had an amazing opportunity to go to Salzburg, Austria and Switzerland. It was a gift from my parents given over 4 years ago for my 30th birthday. Unfortunately we had to postpone our trip but now finally my husband and I are able to go to Europe with my parents!

We flew from San Diego to JFK then onto Zurich, Switzerland.  I felt like a little kid in a candy store as we were coming into Zurich.  I really didn't know what to expect for the entire trip and so my expectation were completely in check with no real expectations.  The land though was so different than what we have here in Southern California.  While we are very green (wherever it is watered) the land is very brown and where there are no sprinklers.   I'd been to Europe one other time before, but it was in High School, and I definitely didn't have the same appreciation as I do now!

After a LONG day of flying and about a 5 hour train ride, we finally made it to Salzburg, Sound of Music land (yes, I'm a fan!!).  Well, I won't bore you with all the details, but definitely wanted to share some amazing memories and pictures!

I also discovered an additional WHY as to why I am building this Beachbody business.  I want to TRAVEL more...and I want to share experiences like this with MY children!

So here it is...a plethora (I love that word) of pictures.  Sorry...I'll try not to bore you too much!

Salzburg was amazingly beautiful.  We loved just strolling around the city.  It's a pretty small city so we got to know it quite well.  Our apartment was pretty centrally located to everything, which was great!  We explored the Fortress, the city, the markets, we did the Sound of Music tour and also went to a concert.  We also randomly ran into some great friends from California that I hadn't seen in about 10 years!  Totally crazy!!  So much fun!!!  And yes, I'll admit, I loved having bread and cheese for lunch!!  ;)

We left Austria and then it was back to Zurich to pick up the love of my life!!  Jonathan had to come a week later but was so gracious to hold down the "Little" house while I was gone!!  Thanks Babe!

We stayed in a little town in Switzerland, called, Wengen.  It was beautiful.  Overlooking a valley in the Swiss Alps, it was breathtaking!  I'm ready to sell everything and go live in Wengen!!

Our plan was to HIKE!!  Literally, you could hike for weeks here and never do the same trail twice!  
All the trails are so well marked so you don't get lost (thank goodness!!)!

Our first full day we went out for the "long hike".  This was a 10+ mile hike...and it was NOT easy!  I was SO proud of my parents, they did amazing on this hike.  We battled all the elements on this hike from First to Schynige Platte.  It was supposed to be a partly sunny day which ended that way.  But before then, we got rain, fog, wind, SNOW (yes SNOW on June 30), more wind, below freezing temperatures, some clearing and then finally some SUN!!!  What an adventure we will never forget!! Oh and not to mention, we made it to the final destination with 5 minutes to spare before the last train took us back down the mountain.  Fortunately we made it otherwise it was another 4 hour hike to the next town, after we had already been hiking for about 8 hours!!!

Well, like I said earlier, this was a delayed Birthday trip gift from my parents...and it wouldn't be a birthday trip without being here over my birthday!  July 3rd...it was the most spectacular day we had our entire trip!  Absolutely breathtaking!  

So...what do you do on your 34th birthday when in the Swiss Alps?  You fly off a mountain!!!  Yep, we went paragliding...it was AMAZING!!!  I was nervous in the morning, but as we got closer to the time, my nerves started to diminish and by the time I was ready to take off...my husband was more nervous for me to go than I was!  That's because I took off first and he watched me run and fly off of the mountain!  We got about 20 minutes of air time and I could have stayed up there for another hour.  There was no sense of "dropping" or anything it was peaceful and calm.  If I ever have the chance of doing it again...100% I will!!!

More Swiss Alp Hiking and Exploring the Towns!

 Well our time had come to an end.  This has put a bug in me for more world travel!  I will definitely return and dream of bringing my kids here to do some hiking too!  Absolutely once in a life time trip and I'm so grateful to my parents for this amazing gift!  Love you mom and dad!!

It was off to Zurich for an evening and then flying back home the next day!!

 We got in late on Sunday night and I had no idea that the kids were going to surprise us at the airport!  It was so great to see Katelyn and Anthony...Jeremy was away at a camp, so I had to wait to see him for another week!

Thanks Nana for bringing the kids to surprise us at the airport!!

There WILL be a next time and I can't wait to experience something new again!!

PiYo Week 2 Women's Progress Update and Meal Plan

I've just finished week 2 of Piyo.  The workouts definitely got easier this week mostly because I had done them once before.   I got used to some of the moves and was able to feel a little more coordinated throughout the workouts! ( I like feeling coordinated!!)

Let's face it.  I am typically more of a cardio type workout gal.  I like the fast pace of T25 and non-stop feeling of that.  So it's a lot for me to slow down and be working on stretching, flexibility and strength in this way...but I can honestly say I'm enjoying it.

After finishing 2 weeks now of PiYo, I definitely have my favorite workouts.  So far, I'm liking Core the best and then Sweat.  It's a little more fast pace (in fact sometimes I can't keep up, LOL), but I really like those to the most.

Do it for the body you've always wanted.Ok...complete honesty here with PiYo...  I hate having my rest day on Friday.  Seriously hate it.  So much so, that I'm thinking of altering my days a bit to have my rest day be on Sunday.  Sunday has always been my rest day, day to sleep in, church day, family day, etc.  It's really hard for me to get motivated to workout on Sunday morning.  In fact, yesterday, I didn't wake up early enough and then all of a sudden it was time to get ready and head to church.  So I thought I would just do a double day on Monday...but, yes, I was really proud of myself, I got home from church and did my workout and then packed up and went to the beach for the afternoon!  So it all worked out, but still this is going to be a struggle for me for Sunday's.  I'll keep you posted on my progress with that!



But overall the week went well and I was able to stick to the plan and get all my workouts in.  Most were at my favorite time to workout, in the morning.  But...I did have to do a couple times of afternoon workouts!

This next week I'm focusing more on my nutrition.  Honestly, it's not been perfect and where I want it to be.  But this week I'll get it more in line to where I want it.

Cilantro Dressing

I love cilantro, it's one of my favorite herbs!  Here's a dressing that is clean and doesn't use straight oil.  It's delicious!

Cilantro Dressing

  • 1/2 bunch of cilantro
  • 1/4 cup of cashews or pumpkin seeds
  • salt to taste
  • 1-2 cloves of garlic
  • 1 lime squeezed (or you can use lemon instead)


Blend in blender (I love my VitaMix!)

You can adjust the measurements as you see fit!

PiYo Week 1 Update - Women's Progress and Meal Plan

Week 1 of PiYo is officially in the bag!!  I'll be honest, I wasn't really sure what to expect...AT ALL!  I am really used to more of the cardio, fast paced type workouts.  So the thought of slowing it down and not doing the jumping and high cardio made me nervous.  However...I really like the change of pace and I know it will be great for flexibility and strength.  I always seem to get these small little injuries and I am really hoping that this will be a great solution for those and make me stronger and more flexible!!

So what does week 1 look like?

Day 1 - Monday
This is the Fundamentals, a 40 minute workout that is very much so a teaching workout.  It explains and breaks down your moves and exercises in the program and teaches you how to perfect these moves to get the best results possible.

Day 2 - Define Lower Body (25 min).  This will make your legs shake by the end of the workout!!

Day 3- Define Upper Body (35 min) be ready to do Piyo push ups!!  Chalene LOVES these!!  Your arms and shoulders will feel it!!

Day 4 - Sweat!!  (35 min)...this is a more fast paced yoga flowing workout with a bit more cardio.  It uses body weight resistance strength training and you will feel this the next day...I was surprised how much I sweat in this workout.

Day 5 - REST!!

Day 6- Define Lower Body

Day 7- Define Upper Body - I'll be honest, I like having a rest day on Sunday, so, this will be a challenge for me but I'll make it happen!


As I was looking over the meal plan for Piyo, I really like it.  I think it will be a great fit.  I'm thinking I will probably incorporate Piyo meal plan with the 21 Day Fix containers to keep my portion sizes in check.  That's my biggest struggle are portions (as I'm sure many of you can relate).

I'm really needing to get focused back on my nutrition.  I was on vacation for 2 weeks with limited availability to the normal foods I eat, so I had to improvise.  And honestly, it took me about a week to get back into my normal eating.  So...I'm back on track and here's what my week looked like for meals.

First I had to determine my calorie range and I am right at 1200 calories for weight loss.  This is approximate, so if I fall within 200 calories of my target I will consider that a success!  So this means that I will have Plan A for target of 1200-1399 calories.

Here's what I'll be eating for my target range:

4 Servings: Primary Vegetables
2 Servings: Secondary Vegetables & Grains
2 Servings: Fresh Fruit
4 Servings: Lean Protein
3 Servings: Healthy Fats

Here is my menu for the week.  Planning the first one always seems to take me a little bit of time, but once you have the layout of it then it's really easy to substitute different foods in and out.  Feel free to use this meal plan as your own and adjust it as you see fit!

I'm working on trying to vary my meals a bit more.  I tend to eat the same thing ALL the time.  I would like to get to where I am changing it up a bit and adding more of a variety of foods into my menu.  I think my body responds better to the variety and I like the taste of variety!

Jiggle Free July Challenge

I've been out of the country for a couple weeks and just getting back and settled...will update more on that fun later!  But for now I wanted to share this delicious recipe!

While I was on the Ultimate Reset I discovered new foods that I was not aware I liked...such as roasted beets.  This was one of the recipes I really enjoyed and have already made it a few times even being off the Ultimate Reset.

Roasted Root Medley
Ultimate Reset Recipe, Roasted Root Medley(Makes 1 serving)

  • 1/4 medium yam, cut into 1-inch chunks
  • 1/2 medium carrot, cut into 1-inch chunks
  • 1/2 medium beet, cut into 1-inch chunks
  • 1/4 medium onion, peeled, cut int large wedges
  • 2 tsp coconut oil, melted
  • Himalayan salt to taste


Preheat oven to 400 degrees F.  Combine yam, carrot, been, onion and melted oil and salt; mix well.  Arrange veggies in a single layer on a baking sheet.  Bake for 40 to 50 minutes or until tender.  Turning once or twice.

This is a great side dish or a nice vegan meal option.
