Family Vacation - Paid in Full by Helping Others!

There's one thing that we love to do as a family...take vacations!  Now, this is something that has always been a priority in our family since my husband and I got married.  It's something we both grew up doing and seeing the importance of it and wanted to pass it along to our children.

However...vacations are not cheap!  Even if you try and make them inexpensive, they always add up. But over the years, it has been something that is just so important that we took them anyways and just had to "find a way" to pay for it later!  I've always joked with my husband that we could be in so deep in debt but he would still find a way to get us up to the mountains to ski!

So, as you can see...our family vacation time is something that is SO super important to us!  Over the last little bit of vacations, I've been able to contribute to our trips with my Beachbody income, which was always a huge help!  But, this Memorial Day we took a trip up to Mammoth (yes, one of our favorite family places to go...looks like a condo there is on the dream board!), and what was so exciting about this, is that my business completely paid for this trip!  While we would have taken it anyways, we would have been paying it down slowly.  This time, however, I was able to cover the expenses, activities and extras with my income which was SUPER exciting!  

Working this business is not all about the money, as far as money goes.  But the beauty of it is that it allows us to do the things that we love to do as a family (making memories together, being outdoors enjoying God's creation, spending time together, enjoying fun adventures and new things), and it keeps us from going into debt to enjoy these memories we're building!  

Whether you're someone who loves to travel or take family trips, or not, I'm sure making memories with your family is important to you!  Whatever those memories may be, they are YOURS and your family's!  Why not be able to make memories and not have to worry about what it's going to cost or how long it will take you to dig yourself out of the hole from your vacation.  We are able to do the things we love doing with our kids and not have to worry about how we'll pay for it afterward.  Now, we don't go overboard, but we definitely did some amazing activities this time that we've always only dreamed about...one of them being horseback riding!!

Black Bean Peppermint Brownies

Yep, you read that right!!  Black Bean Brownies...are you brave enough to try?

So, if you love brownies like I do, then you'll probably be willing to try something that will not throw you completely off track of your nutrition plan.  I've got to say, this is still a splurge, but a "healthier" splurge.  Now, even though these are gluten free and ohh so yummy for a "healthy brownie", it doesn't mean you can eat the entire batch of brownies (although I'd love to!).  And, I'm going to be totally honest with you...I have no idea what the breakdown for the 21 Day Fix would be.  This one is a little more complicated for me!  I'm sure Autumn has figured these things out but, I just don't know!  I'd just consider it a "cheat" (on the healthier side of cheat)!

Black Bean Peppermint Brownies:

  • 1 (15 oz) can no-salt-added black bean, drained and rinsed
  • 3 large eggs
  • 1/3 cup melted coconut oil
  • 1/4 cup unsweetened cocoa powder
  • 2 tsp vanilla
  • 1/3 cup honey (or agave nectar)
  • 1/4 cup finely chopped nuts, pecan or walnuts for topping (optional)
  • handful of dark chocolate chips
  • 1/4 to 1/2 tsp peppermint extract


Preheat oven to 350 degrees.  Spray 8x8 baking dish with cooking spray, set aside.

Combine beans, eggs, coconut oil, cocoa powder, vanilla, honey and peppermint extract in a food processor (I used my Vita-Mix) and make sure the beans are completely pureed and everything mixed together.  Pour batter into the prepped baking dish.  Sprinkle with nuts (if desired) and dark chocolate chips (you can leave them on top or mix them in a bit).

Bake for 30-35 minutes or until center is set.  Let brownies cool, store in fridge!

Clean Chicken Parmesan Bake

I LOVE quick, easy, healthy and TASTY meals!!!  This one is super fast to prepare and pop it into the oven and throw some sides together and you've got a delicious meal in minutes!!

Ingredients
Clean Chicken Parmesan Bake, www.HealthyFitFocused.com, Julie Little4-5 chicken breasts
1 cup plain Greek yogurt (add a bit more if you use more chicken!)
1/2 Parmesan cheese, shredded or crumbled
1 tsp garlic powder (or fresh garlic)
1/2 tsp salt
1/2 tsp pepper
(optional- 1 can artichoke hearts drained and chopped)

Directions: (only takes 5 min to prepare!!)

Preheat oven 375

Line baking sheet with foil (this is a must otherwise the cheese will be a PAIN to remove).  Spray the foil with oil or cooking spray.

Mix Greek yogurt, Parmesan cheese, garlic powder, salt, pepper (and chopped artichokes) together.

Pat the chicken dry and coat in your mixture (both sides).

Lay on baking sheet.

Cook 45-50 minutes until golden brown spots appear on chicken

Serve with Brown Rice and Steamed Veggies!!

Tip: Around 40-45 min carefully dump juices that have accumulated in the pan, helps reduce burning
Tip:  Turning oven to broil for 1-2 min after dumping juices will help create the brown spots on the chicken.  SET A TIMER for it, I'm notorious for burning things when broiling!

What is the 3-Day Refresh?

I've done the 3-Day Refresh a few times and really love how it helps get me back on track, gets rid of the excess bloat and helps me feel "refreshed" and more energized!  It's totally safe to do this once a month for just a little "mini" cleanse.  

So what is the 3 Day Refresh? The Refresh is a Team Beachbody Product that is meant to be a healthy alternative to cleanses that are on the market that really don't contain nutritional value.  For example, the juice cleanses, the various fasts, extreme cleanses, they really aren't the best option for you.  The Research and Development team really wanted to create a product that gives an alternative to these cleanses that will provide proper nutrition and was safe and effective at helping you with rapid weight loss!

3-Day Refresh + 30 Days of Shakeology and Clean Eating

What comes with the Refresh Kit?  With the basic Refresh kit you get 3 Shakeology packets, 3 packets of the Fiber Sweep, 6 packets of the Vanilla Refresh, a nutritional guide and program manual.

How do you do the Refresh?  You drink a Shakeology Shake for breakfast with a serving of fruit from the book.  You get to have the Fiber Sweep as your mid-morning snack and water.  At lunch you'll have the Vanilla Refresh Shake with a serving of veggies, fruit and good fat.  For Dinner the Vanilla Fresh Shake with a meal choice from the nutritional booklet!!  You can drink green tea and water but avoid all processed foods, canned fruits and veggies, sweeteners and dairy.  You are truly cutting back to the basic to cut the bloating and help you lose weight!!

3-Day Refresh Results

Here's the menu each day:
1)  Upon Waking - 8-10 ounces of water
2)  Breakfast - Shakeology shake mixed with water + 1 serving of Fruit  
     • Morning Tea - herbal or green tea (YES I had this) 
3)  Mid-Morning - Fiber Sweep (drink you mix with 8 oz of water)...surprisingly not too bad. 
4)  Lunch - Vanilla Fresh Shake (love this shake) + 1 serving of Fruit + 1 serving of Veggies + 1 serving of Healthy Fats 
5)  Afternoon Snack - 1 serving of Veggies + 1 serving of Healthy Fats 
    •  Afternoon Tea - herbal tea (optional) 
6)  Dinner - Vanilla Fresh Shake mixed with water +1 serving from Dinner Recipes (recipes provided) + optional 1 cup of organic vegetable broth.  
**The vegetable broth was SOO needed for me.  It tasted delicious and the first night I was so hungry that I actually had 2 cups of it!!
