How to Lose the "Freshman 15" Now that You're Back From College for the Summer!

School's Out!!!  I remember those summers when I was home from college after having lived in the dorms all year long...realizing that I had packed on some pounds during the school year and feeling disgusted with myself.  I sat there in disbelief trying to figure out how to get those stinky pounds off during the summer!

How to lose the "Freshman 15" now that you're back from college for the summerAt that time in my life, I just really didn't know what to do.  I thought I knew how to "eat healthy".  But honestly it was not really "healthy".  Thinking that eating less would get me to lose the weight instead of fueling my body the way it needed in order to give my body proper nutrients to get my body working and shedding the pounds!  If I only knew then what I knew now!  There was one summer I was so desperate that I went on Jenny Craig for a few months, but that only taught me how to pop something into the microwave and eat it instead of teaching me how to live for a lifetime!

So...I know how you feel now that you're back from college and thinking, "What do I do now?".  Well, I'm here to help you!  I only wish I knew what proper nutrition was when I was in school.

    Taco Tuesday! Clean Eating Tacos!!

    I know today is Wednesday... but, this was our dinner last night for Taco Tuesday!!  It's a favorite in our house!  It's the one meal that I know everyone gladly chows down every single week without complaining!  It's quick and easy and it's a winner all around and we never want to miss it!

    So, this recipe has evolved over the years as our family has grown and they now eat a LOT more food!!  What used to be my 1 lb of ground turkey meat suddenly wasn't enough to feed the masses!  So, I've had to find different ways of increasing bulk but not sacrificing taste or healthiness!

    What I started doing, which has worked wonderfully, is adding black beans and brown rice to my ground turkey and it still tastes the same but makes the meat go a lot further!  The amount you add of each is totally up to you, depending on how far you need for the meal to go!!

    Directions
    • 1 lb ground turkey (browned)
    • cooked brown rice (optional - and the amount can vary, I used probably 3-4 cups cooked)
    • black beans (I use 2 cans drained)
    • 21 Day Fix Taco seasoning (to taste)

    After the meat and rice are cooked, mix all the above ingredients together until heated.

    Toppings:
    • Spinach or lettuce
    • Avocado
    • Cheese
    • Greek Yogurt mixed with lime (instead of sour cream)
    • Cilantro

    1 Red (ground turkey and greek yogurt combo)
    2 Yellow (includes rice, beans and 2 corn tortillas)
    1 Green (from tomatoes and spinach)
    1 blue (1/2 from avocado, 1/2 from cheese)

    Mom of 2 - 21 Day Fix Transformation

    I'm so excited to share with you some results of one of my challengers!!  We've not even finished our accountability group yet, but Bethany was so excited about her results so far that she wanted to share...and so did I!

    Ultimate Reset Recipe - Nori Rolls with Tempeh and Veggies

    Ultimate Reset Recipe, Nori Rolls with Tempeh and Veggies, www.HealthyFitFocused.com , Julie Little1/2 tsp extra virgin olive oil
    1 strip smoky tempeh strips
    1 sheet nori seaweed
    1/3 cup cooked brown rice
    1/4 medium avocado, sliced
    1/4 medium carrot, cut into matchstick-sized pieces 
    1/4 cucumber, cut into thin strips

    Heat oil in large skillet over medium heat. add tempeh; cook, stirring frequently, for 2-3 minutes, or until crisp. Place nori on cutting board.  Top with rice, covering half the nori lengthwise. 

    Top with tempeh, avocado, carrot, and cucumber. Roll up from bottom, being careful not to tear nori. Wet end of nori to seal; cut into six slices.

    Clean Eating Teriyaki Marinade

    I've always loved Teriyaki but when I changed up my eating to incorporate clean eating lifestyle, I've cut out all those marinades I used and started looking for alternatives!!  I got this from another coach friend and decided to give it a try!  You can use it on salmon or chicken or anything you think needs a little pep.

    Ingredients:
    1/4 cup Bragg Liquid Aminos (alternative to soy sauce)
    1 1/2 tsp maple syrup
    2 tsp finely chopped garlic
    2 tsp lemon juice
    1/2 tsp sesame oil
    1/4 tsp sea salt 



    Directions:
    Combine all ingredients and place meat or fish in shallow baking dish and marinate for 20 minutes in refrigerator. Turn the meat a few times to distribute the marinade evenly.

    I'm a Stay at Home Mom - Can I Really Make Money from Home?

    I am a mom of 3 beautiful children, Jeremy - 11, Katelyn - 10 and Anthony - 7.  I started having babies when I was 23 and been a stay at home mom (with some part-time jobs for "fun" money) for the last 11 years!  I have been super blessed to be able to stay at home as I know it's not necessarily possible for everyone.

    I remember when the kids were infants and toddlers and just wanting to be able to talk so someone who could carry on a conversation back with me!  I thought I would go crazy at times not having adult interaction and an outlet!  I knew I never really had a "career" but also knew I was made for greatness, in something outside of my children!!  Moms...do you ever feel this way or remember this feeling?

    Well...I'm here to tell you it's possible!  Sometimes as a stay at home mom, we can really fall into a trap of feeling guilty, for many different reasons... whether it's finances, social, or a longing for something more.  It's normal, don't beat yourself up!

    As a Beachbody Coach you have the freedom to have all these things listed above...or whatever it is that speaks to your heart!!  As a coach, I own my own health and fitness business and I help people lose weight and get healthy!  I'm basically their accountability and support system.   MOMS, we do this every day with our children.  We lift them up to be better people, we pour into their lives because we want them to succeed, we offer out encouragement and support because we know they are worth it!!  Seriously...it's not that complicated!  As a mom, I'm perfectly qualified to be a Beachbody Coach!!

    • Love to have fun


    MOMs...YOU are worth it!  You have the ability and capacity to succeed at anything you set your mind to!  You are doing amazing work at home raising your children, I KNOW it's not easy.  I know we don't get the praise and pats on the back that we all deserve!  Being a mom is the hardest job ever, yet it's so rewarding!!  That's how I feel about Beachbody Coaching.  It's not rocket science to be a coach...there are times when it's tough, but the rewards of helping others succeed at becoming healthy, saving lives by helping people get off medications or just get active and moving again, it is SO REWARDING!!!  To get the reminder from challengers that you changed their life by helping them gain their life back.  It restores that missing piece of the puzzle that I think mom's don't get enough of... PRAISE of a job well done!  It feels good to help others!
