Quinoa Chocolate Chip Banana Bake

I came across this recipe thanks to Janette's Healthy Living and can NOT wait to try it.  First, I LOVE quinoa (my kids practically cry when they see me making it…so I'm still working on them, but hopefully this can change their minds)…second, you can't go wrong with chocolate and banana!!  This is a recipe of perfection…

Quinoa Chocolate Chip Banana Bake


  • 1 1/2 cup quinoa, rinsed and drained well
  • 3 cups water
  • dash salt
  • 6 eggs
  • 1/4 cup + 2 tablespoons almond milk
  • 1 1/2 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 cup + 2 tablespoon maple syrup
  • 3 bananas, mashed
  • 1/4 cup + 2 tablespoon dark chocolate chips


  1. Preheat oven to 375 degrees.
  2. Bring water to boil; add quinoa and salt.  Bring to a boil, then reduce heat to low and simmer, covered, for 20 minutes until water is absorbed and quinoa is cooked.  Remove lid and spoon quinoa into a large mixing bowl.  Let cool.  In a medium bow, disk together eggs, almond milk, vanilla, cinnamon and maple syrup.  Add quinoa and mix well.  Gently stir in mashed bananas and chocolate chips.  Spoon into individual baking dishes or one large baking dish.  
  3. Bake for 20-25 minutes until breakfast bake is set.

Optional Add-Ins:  Craisins, Raisins, almonds, white chocolate chips, walnuts.


  1. Just curious...did you make it? And if so, how did you measure out each serving and which 21 day containers to account for?

    1. Hi Stephannie, thanks for the comment. Ok, so honestly...I haven't used this while I was on the 21 Day Fix. Probably what I would end up doing (and honestly not quire sure how accurate this is) but I would probably be on the safe side and fill up a yellow container since it is mostly quinoa, but then use 2 of my tsp. for the chocolate chips and to be on the safe side 1/2 of a purple for the banana. That would be my guess...or use this as your "cheat" for the week! Hope that helps!
