How to Prep your Week for Success


I am someone who needs to prepare for my week in order to stay on track in my eating.  I have always been one that likes to have a plan.  Back about 6 years ago, I would cook for an entire month in one day, then freeze it all and I'd have dinners for the month!  It was amazing! And a lot of work.  Now, I find that it is easier for me (and more practical) to do it a week at a time.  I plan out my menu in advance on Saturday, then usually do my shopping on Sunday and will get some cooking in on Sunday evening.

So…what do I do to prepare:


1)  Create a Meal Plan

I use a meal plan template to create each menu…now, I will say that I don't mind eating the same or similar things each day for breakfast or lunch, so that makes things easier!  Also, I'm not creating something brand new every single week.  I will go back and use menus I've made previous weeks or just substitute in where I need.

2)  Make a Shopping List

You've got to plan ahead and have the items on hand that you need for the week, or you'll find yourself reaching for the "junk" that you really don't want to eat!  Plus, when you make a list and go shopping for what you need that week, it saves you so much time during the week (and quite frankly, saves a lot of money!)

3)  Get Organized 

Get yourself organized once you've done your shopping.  Figure out what you need to cook ahead of time…what you can combine in a freezer baggie and put in the freezer for a crockpot meal (Crockpot meals are my favorite and save so much time and energy)…what veggies you need chopped, etc.  

If you can get yourself organized and plan what needs the oven or how many recipes use onions so that you can save time by cutting that many onions up at once, it will really save you lots of time (and onion tears!).  

4)  Get to work!

 The normal things I find myself doing on a prep Sunday:
  • Chopping Veggies
  • Chopping Fruit if needed
  • Cooking Rice or Quinoa
  • Grilling Chicken
  • Making Turkey Meatloaf Muffins (This is a FAVORITE in my house!)
  • Making any salad dressings or seasonings
  • Chopping Salad Toppings (I will chop carrots, broccoli, bell peppers, snap peas, etc and put them in a container so that when I am making my salad the night before I just take a scoop of the mixture and I have an instant topping!)
  • If I have crockpot meals, I will gather the ingredients and place them in a freezer baggie and then freeze it.  Then all I have to do is pop it in the crockpot before I leave for work

Fiery Chile Beef


This is one of my friend's favorite meals.  I noticed that she was always getting flank steak and never had a good recipe, so I finally got the recipe and, thanks to Rachel…here you go!  It's a bit spicy, but you can tone it back as much as you want.  We like to serve it over brown rice, but it's also good to serve in corn tortillas!!

Ingredients
    Fiery Chile Beef, Clean Eating Recipe, Flank Steak
  • 1 flank steak (1-1.5 lbs)
  • 2- 14.5 oz can diced tomatoes, undrained
  • 1- 15 oz can of pinto or black beans drained and rinsed
  • 1 medium onion chopped
  • 2 cloves of garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1/4 tsp black pepper
  • 1 canned chipotle chile pepper in adobo sauce, diced (this is ONE chile, NOT an entire can of chiles--your mouth would be on fire!  If you are sensitive to spicy foods leave this out or only do a small amount)
  • 1 tsp adobo sauce from canned chile pepper

Directions
  1. Cut steak into 6 evenly sized pieces, place in Crock Pot
  2. Add the rest of ingredients and mix
  3. Cook in Crock Pot on LOW for 7-9 hours
Serve over brown rice with steamed veggies on the side OR serve inside corn tortillas.

Strawberry-Pineapple Shakeology Recipe…and more!


The new Strawberry Shakeology was released about a month ago…I decided to try it but wasn't sure I would enjoy it as much as I love my Chocolate Shakeology…However, I decided to give it a try thinking "I can put up with it for a month!"  Well…I LOVE it!!  I'm not sure if it surpasses chocolate, but it comes in very close!  I'm a chocolate girl thru and thru…but whatever it is about the Strawberry, I just love it.  It's a great change for me right now especially!!

Greek Strawberry-Banana
1 scoop of Strawberry Shakeology
1 cup water
1/2 cup nonfat plain yogurt
1/2 medium banana

Tropical Strawberry
1 scoop of Strawberry Shakeology
1/2 banana
1/4 cup frozen pineapple
4 oz Almond Milk
6 oz water

Double Berry
1 scoop of Strawberry Shakeology
1 cup frozen raspberries
4 oz Almond Milk
6 oz water

Strawberry Lemonade
1 scoop of Strawberry Shakeology
1 cup water
2 Tbsp. fresh lemon juice
1 tsp pure maple syrup

Strawberry Mojito
1 scoop of Strawberry Shakeology
1 1/4 cup water
2 tbsp fresh lime juice
2 tbsp. chopped fresh ming
1 tsp raw honey

Almond Strawberry Dream
1 scoop of Strawberry Shakeology
1 cup unsweetened almond milk
2 tsp almond butter
1/2 tsp pure almond extract

30 Day Squat Challenge

I've been doing a 30 day squat challenge on my Facebook page and it's been really fun have a lot of people doing it with me…SOO I wanted to put it here to get even MORE people involved.  It only takes a starting somewhere to get going!!  So, let's start here!!  Here's the schedule below, you will start at 50 squats and work your way up to 250 squats by the end of the month!
