Skinny Nana Cookies

So I'm always in the search for a healthy treat to share with my family!  I really try and limit the amounts of sugar they get in their diet.  It's hard to do that because now that they are getting older I don't have all the control...there's sweets everywhere, at school, church, friends houses, parties...the sugar doesn't end!  So...this will be the true test, my children!!!

So this recipe is SUPER easy and has only 3 ingredients!  I found it off Pinterest and thought I'd give it a shot!  I love that there was NO extra and added sugar!

Skinny Nana Cookies...only 3 ingredients.  Banana, Oats, Dark Chocolate Chips!  Kid and Hubby approved!
Skinny Nana Cookies
Ok, ya ready?



2 medium ripe bananas
1 cup rolled oats
1/4 cup dark chocolate chips
(you could even add some extras, cinnamon or chopped walnuts)

Mash the bananas
Mix bananas and oats together
Gently fold in dark chocolate chips
Spoon out the batter onto a cookie sheet
Bake 350 degrees for 12-15 minutes.

Summertime BBQ Recipe - Pineapple Chicken Skewers

I love to grill but I'll be honest, I get pretty boring when it comes to grilling sometimes.  It always is a go-to delicious meal, but I tend to cook up the same things!  Well...tonight we're having Pineapple Chicken Skewers!  I'm super excited and wanted to share the recipe with ya'll!

Perfect Summertime Grilling!

Recipe: Serves 4 (2 skewers each) 
Prep time: 20 min. Cooking time: 10 min.

Pineapple Chicken Skewers - 21 Day Fix

  • 8  - Bamboo skewers
  • 1 lb - raw chicken breast, boneless, skinless, cut into 16 1-inch pieces
  • 1/4 cup - reduced-sodium tamari soy sauce, gluten free
  • 2 tsp. - sesame oil
  • 2 tsp - grated fresh ginger
  • 1 (8 oz.) can  - Pineapple chunks in juice, drained
  • 1 - medium red bell pepper, cut into 16 1-inch chunks
  • 1/2  - large red onion cut into 16 1-inch chunks 


Directions
  1. Soak babboo skewers in water for 30 minutes
  2. Place chicken in resealable plastic bag (or container); add soy sauce, oil, and ginger; seal bag and shake gently to mix.  Refrigerate at least 30 minutes to marinate.
  3. Preheat grill on medium heat.
  4. Place a piece of chicken, pineapple chunk, bell pepper, and onion onto a skewer.  Repeat, so the skewer has 2 pieces of each ingredient.  Repeat with seven remaining skewers.  Discard marinade that contained chicken.
  5. Grill skewers on covered grill for 4 to 5 minutes on each side or until chicken is no longer pink in the middle.
  6. Serve immediately.

I just returned from Nashville where I was able to join with my Beachbody family for 3 fun packed days of learning, celebrating and a time to dream bigger to create the future we desire at Beachbody Summit!  I started this journey as a Beachbody coach almost 2 years ago.  I was searching for a workout I could do from home and came across T25 so decided to dig deeper into researching it.  I ran across my coach and decided to contact her!  I immediately learned about the business side of things, and being that I'm a Mompreneur by nature, I quickly learned that this was a really awesome business model!

So, what did I do??  What ANY determined woman would do...I crafted a plan to talk to my husband about the business opportunity and WHY this was such a brilliant idea!  I have had my fair share of "at home businesses" in the past, some successful, some not!  None the less, I crafted a very persuasive case about why this one was going to really be the one that fueled my passion!  

I took my hubby out for a picnic date at the beach and told him I wanted to do this T25 fitness program, start drinking Shakeology, be in an online support/accountability group...AND, I was going to do this as a business too!  As we talked about it, he had questions...and I had answers, and it really seemed to all fall into place and he said "go for it"!

So...2 years ago, I jumped into my first challenge group while, at the same time, became a coach too and even though he was a little skeptical at first, he is SO thankful I decided to jump in and start coaching!  It has blessed our family in ways we couldn't have imagined!

Well, this year was my first experience attending Summit and I'm so glad I made the commitment to be a part of this experience.  Yes, we had workouts with celebrity trainers, training seminars, general sessions, amazing opportunities to network with other like-minded men and women and learn from not only the speakers, but the other coaches too!

What is Cize? Love Dance? Can't Dance? That's OK!

Have you heard any hype about the newest Shaun T program coming out soon???  Well I've got to say that I'm pretty excited about this!  It's called CIZE...the END of Exercize!!!

Now, I'm going to be 100% honest with you.  When I first heard about this program coming out I was really annoyed and thought it was stupid!  I suck at dancing and I was bummed it was a "dance" video because that's the last thing I'm remotely decent at.  Seriously...this girl's got NO moves.  It's quite comical!  So, to say the least, I was NOT excited about this at all!!!

So...fast forward about a month after I heard about this program coming out...and I got to try it out.  Still rolling my eyes as I was beginning the DVD, I gave it a shot anyways, and decided that if I could get through this 30 minute video without killing myself and my 2 left feet, then maybe there was hope for all those terrible dancers like me in this world!

Well folks...I have news for you!!!  I made it through the routine, didn't injure myself (or anyone around me) and smiled and laughed the entire time!  I actually came out of it excited for CIZE to be released and feeling like I knew a little bit more how to dance!!  (and that I could actually keep up with my kids and their sweet moves!  LOL).




I've now tried 2 different routines (DVDs) and here's what I like about CIZE:

  • It's super fun
  • ANYONE can do this (even the non-dancer type people like me!)
  • Shaun T starts you out slow and walking you through every move so you're not lost!!  (I love this the most, there are still some moves I get confused with but I'll get there)
  • You work up a good sweat doing this...and you're just dancing!
  • If you feel totally stupid while dancing, that's ok because you're in the comfort of your own home!
WHAT IS CIZE?

Chocolate Peanut Butter Shakeology Ice Cream

Ice Cream and 4th of July simply go hand in hand!  I remember as a little girl our neighborhood would have a pot luck and every family would bring out their own homemade ice cream (ohh so delicious!!!), so this recipe just shouts 4th of July for me!!

Seriously, can it get much better than this?  All of my favorite foods in ONE recipe...chocolate, peanut butter, Shakeology and ice cream!  Why NOT combine them all together for a delicious healthy dessert! 

Here you go...4 ingredients, 10 minutes to make (plus freezing time) and a healthy ice cream all in one!

Chocolate Peanut Butter Shakeology Ice Cream

Total Time:  4 hours 10 minutes
Prep Time:  10 minutes
Cooking Time: none
Yield: 2 servings



Ingredients:
1 medium banana, cut into chunks
1/2 cup unsweetened almond milk
2 scoops Chocolate Shakeology
2 Tbsp. al-natural smooth peanut butter



Preparation:
  1. Place banana in plastic bag; freeze for 4 hours or until completely frozen.
  2. Place almond milk, bananas, Shakeology and peanut butter in blender (or food processor); cover.  Blend until smooth
  3. Serve immediately!!
Containers for 21 Day Fix:  1/2 yellow, 1 red, 1 purple, 1/2 orange

How to Survive a 4th of July Holiday Weekend!

Happy Summer!  WOW, can you believe that it's July already?  There's SO much going on in July for our family, it seems like we live in a constant "holiday mode" all month long!  First it's my birthday on the 3rd, then of course you've got the 4th, then our anniversary toward the end of the month and then my son's birthday!  Not to mention I'll be gone for about 5 days in mid-July for the Beachbody Coach Summit!!  So, literally, there could be a lot of "excuses" to eat very poorly and make it drag on all month long!

So, here's a few tips that I'm going to be practicing not only for the 4th of July, but for all the other activities that I have going on in July!

My goal in July is to be focused 80-90% of the time and then enjoy the special days with a nice dinner and some wine.  For me, those really come more so around my birthday and anniversary.

Here's my plan and some tips for July:

1)  Make a goal/plan
What do you want to accomplish during this month or the holiday/event you're attending.  My goal is to be laser focused in between my "events, special days, etc".  I know that I have events coming up where I want to feel good in what I'm wearing but at the same time enjoy an extra treat.  So, that requires me to know that on the "off" days, I must be making healthy choices, bringing healthy snacks, etc.  Don't forget, you must be realistic in your goals too!

2)  Track your nutrition
This is key for me...If I don't track my nutrition and what I'm eating (containers for the 21 Day Fix or if you like to count calories by using My Fitness Pal or Lose It apps) then I know I'm not going to stay as on course as I want.  So, this is something that really helps me out!!  (If you'd like more info on the 21 Day Fix and color coded containers, see form below!).

3)  Don't forget to exercise
It's summer!  There's tons of things you can do outside.  For me, I wake up (not as early as the school year) and get my workout in first thing so it's out of my way!  Then, anything else I do activity wise is just bonus!  If you don't have any workout DVDs or a place to workout, then get creative, go for a walk/jog, play with your kids at the park, jump rope, swim.  But GET MOVING!!!

4)  Be prepared for parties/events
When you're going to a party or event/dinner, mentally prepare yourself for what you're going to have.  If it's a party, them BRING a health dish to share so that you KNOW you'll have something healthy to eat.  Another tip for parties, have a Shakeology before you go so you're not as likely to overload on unhealthy foods.  If you can go into your event KNOWING what you're going to splurge on and already setting your limits then you can enjoy your treat and not feel "guilty" with splurging.  Tell yourself you're going to have one dessert or one glass of wine.  Set your limits ahead of time and make it reasonable.  Plan your day follow the 80/20 rule, 80% of your day on track and 20% you'll enjoy your event!

5)  Always be drinking
No, no...I don't mean alcohol...this can be your "20%" treat.  But stay hydrated!  Always carry a glass of water around...spice it up with some lemon, lime, cucumber or berries.  Get some sparkling water so you feel like it's a little treat!  Drinking water will keep you feeling full, you'll have something in your hand at parties and not be as tempered to always keep refilling your beer or wine.  And...it's good for you!  Staying hydrated will help you lose weight too!!

6) Last but not least, follow the 80/20 rule
I mentioned it above, but if you can be laser focused 80% of the time and really make good healthy choices, then 20% of the time you can enjoy your treats, wine, desserts or whatever you like.  But...make sure you don't get the numbers mixed around where you find yourself doing 80% treats...that won't work!  It's all about moderation.
